When you want to take a meal over to a friend or family member who is going through a hard time, meatballs is a perfect meal to make. You can easily double the recipe and they freeze well too! Make a side of rice or pasta and you have an easy and delicious meal that is sure to help them out – one less thing for them to think about – cooking dinner that night.
Our favorite meatball recipe is Norene Gilletz’s Tangy Sweet & Sour Meatballs. You may think a couple of the ingredients are surprising, but rest assured, they are the most delicious meatballs that everyone loves.
Ingredients
1 1/2 lb. minced meat
1 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
1 egg
2 tbsp. matzo meal
1 1/2 cups ketchup
2 cups ginger ale
Instructions
Combine first 6 ingredients and form into small balls. Combine ketchup and ginger ale in a large saucepan and bring to a boil. Drop meatballs into sauce, cover and simmer for 2 hours.
Tips:
To shape meatballs easily, wet your hands for easier handling.
When mixing ingredients together for ground meat mixture, don’t overmix or meatballs will be tough.
Meatballs freeze beautifully. I like to store them in single serving-size freezer containers. Smaller containers defrost more quickly than larger ones.
